Indian jujube, also known as Chinese apple, is a plant that belongs to the buckthorn family. It originates from South-East Asia, but it can be found in areas with tropical and subtropical climate around the world today. Ziziphus Jujuba is more cold tolerant than other species, able to handle temps of 25 degree F at night, but is also able to tolerate heat well too. They are able to grow in many conditions from desert to alpine. This tree will tolerates most soil conditions including rocky, sandy, clay, & times of drought. Indian jujube grows on sandy, loamy and gravelly, well-drained soil, exposed to full sun (usually in open forests, pastures, floodplains, near the roads and in the wastelands). It is classified as weed in Australia and Fiji. People cultivate Indian jujube as a source of food. Jujube grows in the form of shrub or small tree that can reach 4 to 40 feet in height and 33 feet in width. It produces numerous zigzag branches covered with curved thorns. oval or ovate leaves with rounded tips and finely toothed or smooth margins. They are dark green, glossy on the upper side, hairy on the bottom side and alternately arranged on the branches. Indian jujube produces greenish-yellow or whitish flowers arranged in small clusters (of 10 to 15 flowers) that grow from the axils of leaves. Blooms during the spring and summer. Flowers attract honeybees, wasps and flies, which are responsible for the pollination of this plant. Fruit of Indian jujube is round- or egg-shaped drupe. It has smooth, thin skin, fleshy pulp and hard stone with two oval seed in the middle. Ripe fruit can be yellow, orange or reddish-brown colored. Jujube fruit is recognized as a nutritious food and important traditional medicine in China, Korea, Japan, and Southeast Asia. Jujubes are richer in vitamin C, sugar, bioflavonoids, edible cellulose, and minerals than other fruit species. Soluble solids content ranges from 20 to 40% in fresh mature fruit. Carbohydrate content in dried jujubes can reach as high as 70 to 85%. Fresh jujube fruit contains 200 to 500 mg of vitamin C per 100 g fresh weight, while apple, pear, and peach have 1 to 8 mg/100 g fresh weight. Jujubes are also rich in cyclic adenosine monophosphate (CAMP), which is an important “second messenger” in many biological processes in the human body.
